On this occasion, it was  <\/span><a href=\"https:\/\/www.ipsos.com\/it-it\/29-settembre-giornata-spreco-alimentare-caro-prezzi-carrello-spesa\" target=\"_blank\" rel=\"noopener\"><br \/>\n  <span style=\"font-weight: 400;\">published<\/span><br \/>\n<\/a><span style=\"font-weight: 400;\"> the survey<\/span><i><br \/>\n  <span style=\"font-weight: 400;\"> Cross Country Report 2023 &#8211; Food &amp; Waste around the World.<\/span><br \/>\n<\/i><span style=\"font-weight: 400;\">, according to which, compared to the summer of 2002, <\/span><b>Italians have reduced food waste by 25 percent.<\/b><span style=\"font-weight: 400;\"> This is encouraging news, which <\/span><b>we decided to celebrate by offering you an &#8220;empty-fridge&#8221; recipe <\/b><span style=\"font-weight: 400;\">taken from the Roman and Lazio culinary tradition: <\/span><b>the Suppl\u00ec.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">To prepare them you need <\/span><b>a rice that releases a good amount of starch<\/b><span style=\"font-weight: 400;\">: some recommend risotto types, such as<\/span><b> Carnaroli and Arborio<\/b><span style=\"font-weight: 400;\">, those who prefer <\/span><b>Roma, Ribe and Originario.<\/b><span style=\"font-weight: 400;\">  The rice should not be uncooked &#8211; watch out for the &#8220;mush&#8221; effect. In the classic recipe  <\/span><b>is seasoned with meat sauce or &#8220;fake&#8221;<\/b><span style=\"font-weight: 400;\">, but today it is made in many other variations: amatriciana, gricia, cacio e pepe, carbonara, alla &#8216;nduja, alla cicoria, alla pescatora &#8230; so give way to creativity!<\/span><\/p>\n<p><b><span style=\"font-weight: 400;\">Suppl\u00ec are a <\/span>good solution for not wasting leftovers<span style=\"font-weight: 400;\">; in this regard, we would like to remind you that the safest way to store rice is to store it inside an airtight container, place it in the refrigerator within an hour of cooking and consume it within two days if seasoned, within three to four days if unseasoned. Fire up the stove and let the challenge begin!<\/span><\/b><\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-5d791fef elementor-widget elementor-widget-heading\" data-id=\"5d791fef\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Suppl\u00ec on the phone<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-7d091850 elementor-widget elementor-widget-text-editor\" data-id=\"7d091850\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">The name &#8220;Suppl\u00ec&#8221; comes from the expression &#8220;<\/span><i><br \/>\n  <span style=\"font-weight: 400;\">en suprise<\/span><br \/>\n<\/i><span style=\"font-weight: 400;\">&#8220;, by which all kinds of croquettes covered with breadcrumbs are referred to in French cuisine. The rustic dish is also known as the  <\/span><b>&#8220;Suppl\u00ec on the phone&#8221;<\/b><span style=\"font-weight: 400;\">, because<\/span><b> tradition dictates that you eat it by opening it in two, so that the melted mozzarella cheese inside creates a thread between the two halves<\/b><span style=\"font-weight: 400;\">, making the croquette resemble a telephone. <\/span> <\/p>\n<p><span style=\"font-weight: 400;\">But how do you prepare Suppl\u00ec? The process is quite simple but requires some manual dexterity and  <\/span><b>at least an hour&#8217;s time-excluding the cooling time of the rice. <\/b><span style=\"font-weight: 400;\">Let&#8217;s look together at the ingredients and all the steps to prepare <\/span><b>about 20 Suppl\u00ec. <\/b> <\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-194721b9 elementor-widget elementor-widget-heading\" data-id=\"194721b9\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Ingredients<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-338d4ced elementor-widget elementor-widget-text-editor\" data-id=\"338d4ced\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">&#8211; 500 g rice;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; 400 g of tomato puree;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; 150 g mince for meat sauce-usually beef is used, but in the spirit of the challenge, any type you already have will do;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; \u00bd onion for saut\u00e9ing;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; 2 tablespoons extra virgin olive oil;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; vegetable broth;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; \u00bd glass of white wine (about 100 ml);<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; a knob of butter;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; 4 whole eggs;  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; grated cheese &#8211; pecorino romano or parmesan cheese;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; 200 grams of mozzarella cheese;  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; breadcrumbs (preferably not too fine);<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; flour (optional);<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; fine salt to taste;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; black pepper to taste;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; Plenty of peanut oil for frying.  <\/span><\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-36faa771 elementor-widget elementor-widget-heading\" data-id=\"36faa771\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Preparation<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3704d496 elementor-widget elementor-widget-text-editor\" data-id=\"3704d496\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">Chop the <\/span><b>onion<\/b><span style=\"font-weight: 400;\">, place it in a pan with the<\/span><b>oil<\/b><span style=\"font-weight: 400;\"> and the <\/span><b>mince<\/b><span style=\"font-weight: 400;\">; let it brown and then <\/span><b>deglaze with wine<\/b><span style=\"font-weight: 400;\"> over high heat; when it has evaporated, <\/span><b>pour in the passata<\/b><span style=\"font-weight: 400;\">, add <\/span><b>salt and pepper<\/b><span style=\"font-weight: 400;\">  and cook over moderate heat until the sauce has reduced and thickened. Meanwhile, beat 2 of the 4 eggs.  <\/span><b>Add the rice<\/b><span style=\"font-weight: 400;\"> to the sauce and<\/span><b> cook it over low heat <\/b><span style=\"font-weight: 400;\">without a lid, turning it often and <\/span><b>pouring in the broth<\/b><span style=\"font-weight: 400;\">  little by little, until cooked al dente-the mixture should be creamy but not liquid. Taste for salt and, if necessary, add it only at the end. Turn off the heat and add the nut of<\/span> <b> butter<\/b><span style=\"font-weight: 400;\">, the <\/span><b>grated cheese<\/b><span style=\"font-weight: 400;\"> and the <\/span><b>beaten eggs<\/b><span style=\"font-weight: 400;\">, mixing well until <\/span><b>amalgamate everything<\/b><span style=\"font-weight: 400;\">. Put it on a plate, spread it out, and  <\/span><b>let it cool<\/b><span style=\"font-weight: 400;\">. In case your rice is already ready,  <\/span><span style=\"font-weight: 400;\">you can skip the first steps and use the leftovers to create the mixture with butter, cheese and eggs, so you can <\/span><span style=\"font-weight: 400;\">make your own version of the recipe-the important thing is that it is not overcooked, or your suppl\u00ec will not be firm enough to hold. <\/span> <\/p>\n<\/p>\n<p><span style=\"font-weight: 400;\">While you wait, beat<\/span><span style=\"font-weight: 400;\"> the remaining 2 eggs <\/span> <span style=\"font-weight: 400;\">and cut the mozzarella into small pieces (cubes or strips)-if it is very watery, drain it or wring it out with a tea towel. When the rice is completely cold,  <\/span><b>form your Suppl\u00ec<\/b><span style=\"font-weight: 400;\">: <\/span><b>wet your hands<\/b><span style=\"font-weight: 400;\">, take some of the mixture and <\/span><b>give it an oval shape<\/b><span style=\"font-weight: 400;\">; then <\/span><b>insert one or two pieces of mozzarella cheese in the center and close<\/b><span style=\"font-weight: 400;\">  the oval by rolling it in his hands. Once Suppl\u00ec is made,  <\/span><b>Dip them in beaten eggs and then in breadcrumbs<\/b><span style=\"font-weight: 400;\">, creating a compact, thick and homogeneous breadcrumbs. In some versions of the recipe, the Suppl\u00ec are also dipped in flour before this step; we leave the choice up to you.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Then, take <\/span><b>a small, tall pot<\/b><span style=\"font-weight: 400;\"> &#8211; or a deep frying pan with an attached basket or deep fryer &#8211; and fill it with <\/span><b>peanut seed oil<\/b><span style=\"font-weight: 400;\">; bring the oil to a <\/span><b>temperature of 180\u00b0 <\/b><span style=\"font-weight: 400;\">and dip in it <\/span><b>2 at a time<\/b><span style=\"font-weight: 400;\">  i Suppl\u00ec. It is important that they float! Fry by turning them several times<\/span><b>  Until the breadcrumbs become more than golden brown<\/b><span style=\"font-weight: 400;\">  (But not too dark, or the mozzarella will not spin). For those who do not like fried food, it appears that Suppl\u00ec can also be baked in the oven at a temperature of 180\u00b0 for 30 minutes-better if in a buttered baking dish. As they are ready, put the Suppl\u00ec<\/span><b>  to drain on paper towels<\/b><span style=\"font-weight: 400;\">. Serve them hot and don&#8217;t forget to check that they are &#8220;on the phone.&#8221;<\/span><b>  there is no greater satisfaction than seeing the mozzarella spinning between the two halves.
